Soy Milk

I typically drink full fat milk, but there’s something about fresh, homemade soy milk that’s simply irresistible. Especially once you find out it’s so simple to make!

This recipe will make about 750ml.

Ingredients

  • 150g soy beans

  • 1L water (in a measuring jug, you will be using this in increments later)

Method

  1. Wash then soak soy beans for 5-6 hours (this water will be discarded, this isn’t included in the 1L above)

  2. Drain the soy beans

  3. Take 100mL water and add to soy beans in a blender / food processor

  4. Blitz until beans are completely broken down, it should be a relatively thick paste. Add a little more water from the 1L total and blitz more.

  5. In a large pot, add in this mulch and the remaining water. Bring to the boil, stirring constantly as the bottom is easy to catch.

  6. Once it comes to a boil, reduce to a simmer. You need to watch it constantly as like milk, it will boil over easily.

  7. Simmer for 15-20min.

  8. Using a muslin cloth or a fine sieve, distill the liquid from the pot. At this stage you can choose to add about 10-15g sugar for sweetness or to your liking.

Note: as this is 100% homemade without any preservatives, refrigerate and consume within 2-3 days.
